<p>These beans are so easy to make &#8211; and everybody will be SHOCKED that you started with canned baked beans!!! The bacon on top is the best finisher! Every bite is sweet and savory and rich. I live alone and ate this entire Dutch oven full &#8211; all on my own. (It took a week &#8211; but I did it!) </p>

<p>This classic side dish recipe starts with canned baked beans but adds so much flavor &#8211; they&#8217;ll never know you took a short cut to start!</p>



<ul class="wp-block-list">
<li>Canned Baked Beans &#8211; I love the Bush&#8217;s Best onion (green can) but also added the Dr Pepper Sweet &amp; Sassy beans &#8211; cuz I&#8217;m sweet &amp; sassy! I used a 28 oz and 16 oz cans.</li>



<li>Leftover pulled pork &#8211; you can buy pre-made or make your own &#8211; here&#8217;s my <a href="https://www.thefoodhussy.com/pulled-pork-on-a-traeger-pellet-grill/" target="_blank" rel="noreferrer noopener">Traeger Pulled Pork recipe</a> using pork butt</li>



<li>Crushed pineapple &#8211; this adds little bites of sweetness! </li>



<li>small yellow onion &#8211; I love a little crunch &#8211; and the onion gives you that &#8211; plus flavor!</li>



<li>green bell pepper &#8211; more crunch! You can use any color bell pepper you like.</li>



<li>Sauce &amp; Seasonings:

<li>brown sugar &#8211; could swap out molasses or maple syrup</li>



<li>barbecue sauce &#8211; I love <a href="https://www.williamsonbros.com/store/" target="_blank" rel="noreferrer noopener">Williamson Bros</a> &#8211; but use what you have or like!</li>



<li>mustard &#8211; plain yellow mustard &#8211; or add in 1 tsp dry mustard</li>



<li>ketchup</li>



<li>garlic powder</li>



<li>bbq seasoning</li>

<li>bacon &#8211; gotta have bacon! Thick, thin, hickory, maple slices of smoky bacon &#8211; whatever you like!</li>

<h2 class="wp-block-heading">How to Make Smoked Baked Beans on the Traeger</h2>



<p>These are the EASIEST baked beans you&#8217;ll make! Put it all in a Dutch oven and smoke it! Then grab a spoonful and <a href="https://www.thefoodhussy.com/traeger-3-2-1-ribs/" target="_blank" rel="noreferrer noopener">some ribs</a> and enjoy!</p>



<ol class="wp-block-list">
<li>Preheat Traeger temperature to 225ºF &nbsp;</li>



<li>Spray a Dutch oven or large cast iron skillet with non-stick spray.
<ol class="wp-block-list">
<li>You could also use a disposable aluminum pan &#8211; but be sure it&#8217;s a sturdy one!&nbsp;</li>
</ol>
</li>



<li>In Dutch Oven, combine beans, pulled pork, crushed pineapple, diced onion, diced pepper, ketchup, brown sugar, bbq sauce, mustard and garlic powder. Stir the mixture until combined.</li>



<li>Dice 5 slices of bacon and sprinkle bacon pieces over the top of the bean mixture.&nbsp;</li>



<li>Sprinkle bbq seasoning on top of the bacon</li>



<li>Place Dutch oven uncovered on the Traeger grill grates for 3 hours or until the top of the bacon is deeply caramelized.&nbsp;</li>



<li>Allow to cool for 15 minutes before serving.</li>

<p>The ingredients are simple &#8211; but you might be surprised what all goes into them! The seasonings and citrus are where the flavor comes from! Here&#8217;s what you&#8217;ll need: </p>

<h2 class="wp-block-heading">How to make Chipotle black beans at home?  </h2>



<p>I decided to start with canned beans &#8211; it makes it a lot quicker and easier &#8211; which is necessary for me when I&#8217;m working two jobs! So this black bean recipe is simple and EASY! Here&#8217;s all there is to it: </p>



<ul class="wp-block-list">
<li>Add oil to a large cast iron skillet on medium-high heat</li>



<li>Once oil shimmers, add onions and saute for 4-5 minutes stirring occasionally until translucent</li>



<li>Add in garlic and cook 1 minute</li>



<li>Add in beans, salt, cumin and oregano. Bring to a boil, then reduce to simmer and cook for 15 minutes. Stir every five minutes or so to make sure it&#8217;s not sticking</li>



<li>As liquid cooks down – add water, stir and continue cooking until thickened</li>



<li>Remove the bay leaf, add in lime juice &amp; lemon juice and serve</li>

<p>I don&#8217;t have a Popeye&#8217;s anywhere near me and I was missing their Red Beans and Rice &#8211; it was my favorite side so I decided to just make it for myself and I was shocked with how easy &#8211; I can&#8217;t wait to share my SECRET ingredient with you! <p>If you want your red beans and rice to actually taste like Popeyes, these are the three things that make the biggest difference:</p>

<li>Smoky Flavor &#8211; you HAVE to use <a href="https://amzn.to/485nBZ9" target="_blank" rel="noreferrer noopener nofollow">Liquid Smoke</a> for this to have that signature smoky flavor!</li>



<li>Regular Oil Won&#8217;t Cut It &#8211; bacon grease is the key to this recipe &#8211; you can use your own or this <a href="https://amzn.to/3Okj1iZ" target="_blank" rel="noreferrer noopener nofollow">rendered bacon fat</a> </li>



<li>Red Beans &#8211; <a href="https://amzn.to/4vPtTq2" target="_blank" rel="noreferrer noopener nofollow">Red Beans are essential </a>for that creamy texture &#8211; NOT red kidney beans! Red beans are smaller, lighter red, and create a creamy texture, making them ideal for rice and soups.</li>

<h3 class="wp-block-heading">Why doesn’t my red beans and rice taste like Popeyes?</h3>



<p>The most common reasons are: </p>



<ul class="wp-block-list">
<li>Not using bacon grease (this is the biggest flavor difference)</li>



<li>Not using <a href="https://amzn.to/485nBZ9">Liquid Smoke</a></li>



<li>Not using Red Beans &#8211; they&#8217;re smaller and creamier</li>
</ul>

<h3 class="wp-block-heading">Does Popeye&#8217;s Red Beans and Rice have meat in it?&nbsp;</h3>



<p>Well that&#8217;s where the secret ingredient comes in! It doesn&#8217;t have meat &#8211; but it does have &#8211; wait for it &#8211; bacon grease! Bhahahahaha! I have a jar on my counter for the bacon grease after I make <a href="https://www.thefoodhussy.com/2019/12/air-fryer-bacon.html" target="_blank" rel="noreferrer noopener">air fryer bacon</a> &#8211; so it was just right there waiting to be used! It adds so much flavor!!!</p>



<h3 class="wp-block-heading">Does Popeye&#8217;s Red Beans use Kidney Beans?</h3>



<p>Nope!!! Red beans and Rice is made with RED BEANS! Red beans are smaller, more of an oblong shape and are pinkish red. They&#8217;re not as hard and are smoother. They&#8217;re super cheap too &#8211; this recipe uses two cans of them. Using canned beans saves time as well because they&#8217;re ready to mash when you add them to the pan.</p>

<h2 class="wp-block-heading">How to make Red Beans and Rice Like Popeye&#8217;s?&nbsp;</h2>



<p><span style="font-size: large;">It&#8217;s so easy! First &#8211; start your rice! You can use any white rice &#8211; I used Uncle Ben&#8217;s Converted White Rice &#8211; it takes a while to cook &#8211; but it ends up being the same amount of time you need for the beans!</span></p>



<p><span style="font-size: large;">Next up &#8211; the easiest part! Dump two cans of red beans in a sauce pan and start heating them up. As they&#8217;re heating &#8211; <a href="https://amzn.to/4vBizxp" target="_blank" rel="noreferrer noopener nofollow">grab your potato masher</a> and start mashing. You don&#8217;t want to mash them all! You still need some bean pieces. </span></p>



<p><span style="font-size: large;">Then you&#8217;ll add the rest of your ingredients &#8211; including the bacon fat &#8211; and thicken it up. As you cook it &#8211; uncovered &#8211; it&#8217;ll reduce and thicken up.&nbsp;</span></p>



<p><span style="font-size: large;">Once it&#8217;s thick &#8211; your rice should be done and you&#8217;re ready to serve! the bacon fat and liquid smoke are definitely the keys to success here &#8211; so don&#8217;t skip either ingredient!&nbsp;</span></p>

I had the leftovers for lunch a couple of days! This makes four servings &#8211; and it reheats perfectly in the microwave. It&#8217;s so good!&nbsp;</span></p>
