Chili's Loaded Mashed Potatoes

Chili's Loaded Mashed Potatoes are simple to make and bring the cheesy goodness into your home! Delicious, slightly buttery mashed potatoes are the perfect side dish and topped with melted cheese, diced meaty bacon and crunchy bits of scallions.

Ingredients
  

  • 2 lbs Yukon Gold potatoes cubed, about 5-6 medium potatoes
  • 1/4 cup butter
  • 1/3 cup heavy cream
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 slices bacon cooked, diced
  • 1 cup Cheddar cheese shredded
  • 2 tbsp scallions green ends, diced

Instructions
 

  • Preheat oven to 400º F and spray a square baking dish with non-stick spray. 
  • Put potatoes in a pot and cover with cold water. Add 1 tbsp salt to water. Put on stove on high heat and bring to a boil. Boil for 20 minutes or until fork tender. 
    2 lbs Yukon Gold potatoes
  • While potatoes are boiling, fry bacon (on stove or in air fryer). I recommend you slightly undercook bacon as it will continue cooking in oven. When done, set aside on paper towels to cool and then rough chop into 1/2" pieces.

  • Preheat oven to 400º and spray a square baking dish with non-stick spray
  • Drain the potatoes and return to the pot. Add in the cream and butter.
    1/4 cup butter, 1/3 cup heavy cream
  • Mash by hand until well blended using a potato masher. It’s fine to have some chunks. 
    Using a hand mixer might seem easier - but you can easily go from perfect to gluey in about 3 seconds. Mashing by hand is always my preference!
  • Season with salt and pepper.
    1/2 tsp salt, 1/4 tsp black pepper
  • Transfer the mash to a baking dish then top with shredded cheese and chopped bacon crumbles.
    1 cup Cheddar cheese
  • Bake for 10 minutes at 400F or until cheese is melted.
  • Top with scallions to serve.
    2 tbsp scallions
