Traeger Smoked Peach Cobbler

This Smoked Peach Cobbler will be a favorite dessert for the whole family! Frozen peaches, a delicious cake batter and a crunchy sugar topping!

Ingredients
  

  • 4 cups peaches sliced, frozen
  • 3/4 cup granulated sugar
  • 1/2 cup butter softened
  • 1/8 tsp salt
  • 1 cup all purpose flour
  • 1 tsp baking powder
  • 1/2 cup milk
  • 1/2 cup granulated sugar
  • 1 tbsp corn starch
  • 1/8 tsp salt
  • 1/4 cup water boiling

Instructions
 

  • Preheat Traeger (or your smoker) to 250º. Spray cast iron Dutch oven with nonstick spray and spread peach slices across bottom of pan.

  • In medium mixing bowl, cream 3/4 cup sugar & 1/2 cup softened butter so sugar is fully incorporated and mixture is fluffy and creamy. 
    3/4 cup granulated sugar, 1/2 cup butter
  • Add dry ingredients (salt, flour, baking powder) and milk and stir to make a batter. If batter is super thick and not spreadable, add 1-2 tbsp more milk. 
    1/8 tsp salt, 1 cup all purpose flour, 1 tsp baking powder, 1/2 cup milk
  • Spread batter over fruit in Dutch oven. 
  • In a small bowl, mix together sugar, corn starch and salt. Sprinkle over top of batter. 
    1/2 cup granulated sugar, 1 tbsp corn starch, 1/8 tsp salt
  • Microwave 1/4 cup water for 1 minute so it's boiling
    1/4 cup water
  • Pour boiling water over ALL of sugar - this is where the MAGIC happens!Be sure to drizzle the water over all of the sugar so every grain is covered with water! 
  • Smoke on Traeger at 250º for 4 hours or until cobbler cake topping is golden brown. (or until the cobbler topping is done – test like you do cake – toothpick in the center – if it comes out clean – it’s done – should be golden)
  • Remove from Traeger and let cool. Serve with a scoop of vanilla ice cream or whipped topping!

Notes

If using canned peaches be sure and drain the peach juices/syrup off really well. If using frozen, just toss them in frozen
