Ingredients

  • 5 slices bacon diced
  • 6 eggs
  • 6 oz Swiss cheese grated (1.25 cups)
  • 1/3 cup heavy cream
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 cup water

Instructions

  • Dice bacon and cook for 5 minutes in air fryer at 360º. Open air fryer and toss bacon. Cook another 3 minutes. Once cooked, pat grease off with paper towel and roughly chop.
  • Grate Swiss cheese but save back 1/4 cup of grated cheese
  • Add the eggs, 1 cup cheese, heavy cream, salt and pepper to a blender and blend on high for 30 seconds until light and frothy.
  • Spray silicone muffin cups with a little non-stick spray and pour egg mixture into silicon cups about 1/2-2/3 full. Sprinkle in 1 tbsp bacon and remaining cheese to each muffin cup.
  • Place 1” water in the bottom of your air fryer basket. If using an air fryer oven, place a pan of water on the shelf under the quiche.
  • Place muffin cups in air fryer basket. Air fry at 270º for 6 minutes. Open and break up top slightly of quiches and air fry for 6 minutes more
  • Remove from air fryer (with pot holders) and let cool for 5 minutes, then use a spatula, carefully remove quiche bites from muffin cups.

Notes

To ensure food safety, eggs should be cooked until both the yolk and the whiteare firm. Consuming raw or undercooked eggs may increase your risk of foodborne illness, especially for those with certain medical conditions. For recipes that call for eggs that are raw or undercooked when the dish is served, use either pasteurized shell eggs that have been treated to destroy Salmonella, or use pasteurized egg products.
