Domino's Pizza has a big menu beyond pizza and this Chicken Carbonara is my constant craving! It's loaded with grilled chicken, fresh onions and mushrooms, creamy Alfredo sauce and more cheese!

Ingredients

  • 16 oz penne pasta
  • 2 large boneless skinless chicken breasts
  • 1 tsp paprika
  • 1 tsp garlic salt
  • 6 slices hickory smoked bacon
  • 1 large sweet yellow onion sliced into slivers
  • 12 oz mushrooms sliced
  • 1 cup provolone cheese grated

Alfredo Sauce

  • 4 tbsp butter
  • 2 tsp garlic minced
  • 1 tbsp flour
  • 3 cups half and half
  • 2/3 cup Parmesan cheese grated

Instructions

  • Boil pasta as package directs to al dente. Reserve 1 cup pasta water. Drain and set aside. You want your pasta al dente as it will continue to cook in the oven so you don't want it mushy.
    16 oz penne pasta
  • Preheat oven to 375. Spray 9x13 casserole dish with non-stick spray and set aside.
  • Season chicken breasts with paprika and garlic salt. Grill/cook until the chicken reaches an internal temperature of 165ºF, approximately 12 to 15 minutes. Set aside to rest.
2 large boneless skinless chicken breasts, 1 tsp paprika, 1 tsp garlic salt
  • In one large skillet, over medium high heat, add bacon and onion. Saute until onions start to soften. Add mushrooms and continue to sauté until bacon starts to brown - about 7 min.
6 slices hickory smoked bacon, 1 large sweet yellow onion, 12 oz mushrooms
  • Spoon veggies & bacon into a bowl and set aside. We’re going to use that same skillet for the Alfredo Sauce.
  • Clean out skillet that bacon was cooked in and melt butter in that skillet over medium-high heat.
    4 tbsp butter
  • Add garlic and stir - turn heat to low. Add flour and whisk until combined to make a roux. Add half and half and Parmesan cheese and simmer - whisking constantly for 3-5 min until it starts to thicken. Remove from heat.
2 tsp garlic, 1 tbsp flour, 3 cups half and half, 2/3 cup Parmesan cheese
  • Dice chicken into bite-sized pieces.
  • In a large bowl, add bacon, veggies, diced chicken and Alfredo Sauce. Stir until combined. Add in cooked pasta and 1/4 cup pasta water.
  • Pour into prepared pan and sprinkle top of the chicken carbonara with provolone cheese.
    1 cup provolone cheese
  • Bake in preheated oven for 12-15 minutes to heat through. Turn oven to broil-low and broil for 2-3 min until top turns golden brown.
  • Sprinkle on some fresh herbs or parsley and serve!
