Blackstone Pancakes

Blackstone Pancakes are now my favorite way to make this breakfast treat! You can do a bunch at once and customize them for each person! Light, fluffy and oh-so-tasty!

Ingredients
  

  • 1 1/4 cups all purpose flour
  • 1 large egg
  • 1 cup buttermilk
  • 1/2 cup half and half
  • 3 tbsp granulated sugar
  • 1 1/2 tsp baking soda
  • 1/4 cup canola oil
  • 1/2 tsp salt

Instructions
 

  • In a large mixing bowl, add flour, egg, buttermilk, half and half, sugar, baking soda, canola oil and salt. Mix with a whisk until mostly smooth and let rest for a few minutes while you prep your griddle. (A few lumps are fine!)

  • Preheat griddle over medium heat. Check griddle temperature with infrared thermometer and be sure heat is approx 250-275º. When hot, spray griddle with non-stick spray
  • Pour 1/3 measuring cup of pancake batter on hot griddle, forming 5 inch circles. I fit 6 pancakes on the 28" flat top griddle. 
    Here's where you add your blueberries or other flavors!
  • When edges start to form and bubbles spread across batter after 2-3 min, flip pancakes using thin spatula. They should be golden brown. Cook on other side for 2 minutes until golden brown. 
  • Remove from griddle and set aside. Do not stack. Lay pancakes in a single layer on a baking sheet or cutting board with parchment sheet on top for remaining layers.
  • Serve griddle pancakes with butter and maple syrup or whipped cream & strawberries!
