Ingredients
  

  • 4 large sweet potatoes
  • 2 tbsp olive oil
  • 2 tsp coarse sea salt

Instructions
 

  • Preheat your smoker to 250ºF with the lid closed.
  • Wash and dry the sweet potatoes to scrub off any dirt. Use a fork to poke holes around the potatoes. Place potatoes in a large bowl and drizzle with olive oil and season all over with salt and pepper.
    4 large sweet potatoes, 2 tbsp olive oil, 2 tsp coarse sea salt
  • Place the sweet potatoes directly on the grill grates. Cook for 2.5 hours until the potatoes are fork tender. You can also test with an instant read thermometer and check for an internal temperature of 205ºF at their thickest point. 
  • Remove from smoker. Tent with foil and rest briefly before serving with butter & brown sugar.
