Cheese & Ham Frittata

This easy Cheese and Ham Frittata is my favorite dish for brunch. Loaded with Ham & Colby Jack cheese - it's great for holiday leftovers or when you've got family over!

Ingredients
  

  • 6 eggs
  • 1/4 cup heavy cream
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup Colby jack cheese diced
  • 2 tablespoons unsalted butter
  • 1 cup leftover ham diced

Instructions
 

  • Preheat oven to 350°F.
  • Whisk the eggs, heavy whipping cream, salt, and pepper together in a medium bowl. Set aside.
  • Melt the butter in an oven-safe skillet or a cast iron skillet over medium-high heat.
  • Turn heat down to medium heat (or even better medium low) and Carefully pour the egg mixture over the top of the melted butter. Cook 1-2 minutes or just until you can see the frittata starting to set on the edges. Pull the edge of the frittata away from the pan to allow some of the uncooked egg to run underneath.
  • Sprinkle the diced ham and cheese over the top of the frittata.
  • Transfer the frittata to the oven and bake another 12-15 minutes, or until the center is just slightly jiggly. It will set more once it begins cooling.
  • Once slightly cooled, cut into 8 slices. Garnish with fresh parsley, spring onions, scallions or chives, if desired.
