Smoked Bologna Burnt Ends

Traeger Smoked Bologna Burnt Ends are a fun and easy appetizer for any BBQ or summer party! Toss them in mustard and seasoning and then pop them on the smoker. Great to make when you want to smoke multiple things at the same time! Take these off early and snack away!

  • Using a sharp knife, slice whole bologna into 1.5” cubes
    32 oz chunk bologna
  • Place bologna in a large bowl and toss with mustard and bbq seasoning rub. Heavily coat all sides.
    2 tbsp Yellow mustard, 2 tbsp Historic BBQ Red
  • Preheat Traeger to 250º and be sure you have enough pellets in the smoker. I recommend Cherry or Hickory for this recipe.
  • Place bologna bites on oven-safe racks fat side up. For 32 oz - I used two racks. Place racks onto the Traeger.
  • Smoke for 1 hour until they have a nice color. Check the temp with your meat thermometer and remove when the bites are 200º.
  • Move bites to a grill skillet or disposable aluminum pan. Raise temp on traeger to 375º. Toss bologna bites with bbq sauce so they are lightly coated like you're glazing them.
    1 cup Williamson Bros BBQ
  • When grill is at temp, place pan back in grill for 10 minutes and then remove and enjoy!
