It's football season again and I still remember making Walking Tacos at the football game concession stand. But as a grown up - I don't need to hold a bag of chips for dinner so I made this delicious Walking Taco Casserole!
Preheat oven to 350º and spray 8x8 casserole dish with nonstick cooking spray
In skillet on medium high heat, brown ground pork and onion and drain any excess grease
1 lb ground pork, 1/2 onion
Sprinkle in taco seasoning and add water
1 packet taco seasoning, 1/4 cup water
Stir until thickened and remove from heat
Spread taco meat mixture into bottom of baking dish
Add layers with taco sauce, shredded cheese and corn chips
2 tbsp taco sauce, 1 cup shredded colby jack cheese, 1.5 cups Frito corn chips
Bake for 20 minutes
Remove from oven and serve with lettuce, tomatoes and sour cream

To reheat, remove lettuce and chips and heat in microwave.
