This recipe is so EASY!!! My Dad used to make acorn squash for dinner all the time and we just did 3 ingredients – 5 minutes and in the oven – FOR AN HOUR! I made the same recipe in the Air Fryer in 25 minutes! It was perfect!
Slice acorn squash in half, clean out inside with a spoon so you've got a little bowl in each half
1 acorn squash
Score inside of squash with a sharp knife in criss-cross pattern
Place both halves of squash cut side up in air fryer basket
Put 2 tbsp butter in each half – laying some slivers on edges
4 tbsp butter
Add 1/4 cup brown sugar in each half
1/2 cup brown sugar
Air fry at 400º for 25 minutes until the halves are fork tender
Use tongs or spoons to gently remove squash halves from air fryer onto plate and enjoy!
Notes
This same recipe will work with any squash – it just might take longer depending on size.
