It's a new year and that means HEALTHY food starts today! These Air Fryer Stuffed Peppers are also made for Weight Watchers! Stuffed with ground turkey and lots of veggies, you won't believe they are only 1-2 points per serving. For those not on WW - just know - they are delicious AND HEALTHY!
While turkey is browning, heat cauliflower rice in microwave according to package directions
To the turkey, add Worcestershire, rice and tomatoes and simmer for 2-3 minutes
While turkey mixture is cooking, prep peppers by slicing off tops and clean the insides (save the pepper tops to use in other recipes)
Spoon turkey mixture into peppers
Air Fryer Instructions: AF at 350 for 10 minutes. Open AF and add shredded cheese. Air Fry 5 minutes more until cheese melts and browns
Oven Instructions: Cover with foil and bake at 350 for 30 minutes. Uncover and add shredded cheese. Bake an additional 15 minutes (uncovered)
Notes
When cooking ground turkey - you can add a little water to the pan instead of oil. I learned this from a low-cal cooking show that used zero fat ever - it really works!
I used one package of cauliflower rice and cooked according to package directions
If you'd like even lower points - you can leave the cheese off all together - but it's a nice to have
