Ingredients
  

  • 1.5-2 lb Tri Tip
  • 1/4 cup Historic BBQ Black Seasoning

Instructions
 

  • When ready to cook, set Traeger temperature to 225℉ and preheat, lid closed for 15 minutes. 
  • Season tri-tip with your favorite rub
  • Place tri-tip directly on the grill grate and cook until it reaches an internal temperature of 120℉, this should take about 60 minutes.
  • When tri-tip reaches 120℉, pull off the grill and wrap in foil.
  • Increase the Traeger temperature to 500°F and preheat, lid closed for 15 minutes.
  • When grill comes to temperature, remove tri-tip from foil and sear for 4-6 minutes on each side.
  • Temp 130-135 for medium rare
  • Pull off the grill and allow to rest for 10 to 15 minutes. Slice against the grain to serve. Enjoy!

Notes

What if I don't have a smoker? How would I make this on a regular grill? 
You just need wood chips. Soak them in water for 30 minutes before starting the grill. One cup of wood chips will last for about 20 minutes. Keep adding chips to the grill throughout the process. 
If you use a charcoal grill, light the coals, when the coals are ready, place them on one side of the grill. Place some of the wood chips on top of the coals. Place your food on the side without the coals to cook it with indirect heat.
