This tater tot casserole no meat recipe is great for Meatless Mondays or anytime you’re craving a veggie-filled casserole! Vegetarian tater tot casserole is healthy and delicious!
1canfat free cream of mushroom soupor cream of chicken
18frozen tater tots
1/4cupcheddar cheesefinely shredded

Instructions
Preheat oven to 350 and spray 8x8 baking dish with nonstick spray
In a large skillet, over medium heat, pour oil in skillet
2 tbsp olive oil
Saute onions, mushrooms and bell peppers until cooked through
1/2 green pepper, 1/2 onion, 8 oz mushrooms
Add cream of mushroom soup and stir
1 can fat free cream of mushroom soup
Pour sauteed onions & soup mixture into the bottom of the pan
Top with tater tots in a single layer
18 frozen tater tots
Bake for 30 minutes until top of the tater tots are golden brown
Remove dish from oven and add shredded cheese to top of the casseroleNo need to put back in oven – it’s such a small amount it melts quick
1/4 cup cheddar cheese
