Ingredients
  

  • 3 5 oz boneless skinless chicken breasts
  • 1 tbsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp minced garlic
  • 1 pint cherry tomatoes
  • 1/3 cup kalamata olives halved
  • 1/4 cup extra virgin olive oil
  • 8 oz feta cheese block
  • 6 oz bowtie pasta
  • 2 tbsp fresh basil

Instructions
 

  • Preheat oven to 400°F. Season the chicken with the Italian seasoning, salt, and pepper. Spray baking dish with non-stick spray. 
    3 5 oz boneless skinless chicken breasts, 1 tbsp Italian seasoning, 1/2 tsp salt, 1/4 tsp black pepper
  • Add the seasoned chicken, tomatoes, olives and garlic to an oven-safe 9x13-inch baking dish and toss to combine.
    1 tbsp minced garlic, 1 pint cherry tomatoes, 1/3 cup kalamata olives
  • Arrange the block of feta in the middle of the baking dish. Pour olive oil over all ingredients.
    1/4 cup extra virgin olive oil, 8 oz feta cheese block
  • Place dish in oven and bake for 30 minutes. Tomatoes should begin to burst and the feta will be golden brown.
  • While the chicken mixture is baking, prepare the pasta according to the package directions.
    6 oz bowtie pasta
  • At the end of cooking time, remove the chicken breasts to a clean cutting board to rest for 5-10 minutes before slicing.
  • While chicken rests, turn oven to broil (high) and return the baking dish with the cheese and tomatoes to the oven for about 3 minutes to brown the cheese and blister the tomatoes a little more.
  • Remove the baking dish from the oven. Stir the cheese and tomatoes in the casserole dish, breaking open the tomatoes. 
  • Add the cooked pasta and toss until evenly coated in sauce.
  • Top with sliced chicken and fresh basil and serve!
    2 tbsp fresh basil
