Traeger Smoked Bacon Wrapped Chicken Thighs
My Traeger Smoker has been working overtime this summer. These Smoked Bacon Wrapped Cheese Stuffed Chicken Thighs are going to be on your grill the rest of the year!!!! Boneless chicken thighs are so juicy and tender - then add a little smokiness and you're golden!
preheat Traeger to 225
slice cojack cheese into long strips
place inside flat chicken thigh
fold chicken thigh over
wrap a slice of bacon around the chicken thigh - using the bacon to cover the open end so the cheese doesn't ooze out and hold in place with toothpick
sprinkle with bbq seasoning
when Traeger comes to temp at 225 - place chicken on grill
Smoke for 1 hour
Brush with BBQ sauce and smoke for another hour
Check temp and take off when chicken is between 160-165 degrees
Let rest until up to 165 and serve!
