- Preheat oven to 350º and spray 8x8 casserole dish with nonstick cooking spray 
- In skillet on medium high heat, brown ground pork and onion and drain any excess grease - 1  lb ground pork, 1/2 onion 
- Sprinkle in taco seasoning and add water - 1 packet taco seasoning, 1/4 cup water 
- Stir until thickened and remove from heat 
- Spread taco meat mixture into bottom of baking dish 
- Add layers with taco sauce, shredded cheese and corn chips - 2 tbsp  taco sauce, 1 cup  shredded colby jack cheese, 1.5 cups  Frito corn chips 
- Bake for 20 minutes 
- Remove from oven and serve with lettuce, tomatoes and sour cream - shredded lettuce, diced tomatoes, sour cream
