Dutch Oven Apple Cobbler

Ingredients
  

  • 4 cups apples sliced (4-5 small)
  • 2 tbsp cinnamon
  • 1/4 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup butter softened
  • 1/8 tsp salt
  • 1 cup flour
  • 1 tsp baking powder
  • 3/4 cup milk

Topping

  • 1/4 cup brown sugar
  • 1/4 cup sugar
  • 1 tbsp cornstarch
  • 1/8 tsp salt
  • 1/4 cup boiling water

Instructions
 

  • Preheat oven to 375º
  • First – peel and slice up your apples. I used five small green apples but I think you could definitely use more apples – it just means more fruit under the cobbler! If you have one of those whizbangy apple corer/peelers – it would be super quick – but by hand – it was a little tedious (but worth it!).
    If you're slicing up your apples ahead of time, squirt then with lemon juice so they don't brown.

  • Place apples in bottom of your Dutch oven sprayed with cooking spray and sprinkle cinnamon on top of apple slices

  • In a large mixing bowl, add white sugar, brown sugar and butter. With a hand mixer, cream the ingredients together until the sugars are fully incorporated into the butter.
    1/4 cup sugar, 1/2 cup brown sugar, 1/2 cup butter
  • Now we'll work with our dry ingredients: Add salt, flour, baking powder and milk to bowl and mix. Combine flour mixture with butter mixture and you'll have a spreadable batter (if your batter isn’t spreadable – add a little more milk)
    1/8 tsp salt, 1 cup flour, 1 tsp baking powder, 3/4 cup milk
  • Spread the batter evenly over the top of apples
  • In a separate bowl, mix 1/4 cup each of granulated & brown sugar with cornstarch & pinch of salt
    1/4 cup brown sugar, 1/4 cup sugar, 1 tbsp cornstarch, 1/8 tsp salt
  • Sprinkle sugar mixture evenly on top of the batter
  • Heat 1/4 cup water in microwave for 40 seconds. Pour water over ALL of sugar – be sure to cover every grain of sugar! This is where the magic happens!
    1/4 cup boiling water
  • Place Dutch oven uncovered in preheated oven for 45 minutes (or until the cobbler topping is done – test like you do cake – toothpick in the center – if it comes out clean – it’s done – should be golden brown)
  • Serve with vanilla ice cream or whipped cream
