For this recipe, I recommend 1/2-3/4" thick chops. I wouldn't use pork chops more than 1" thick in the crock pot - those are just so delicious - grill or make them in the air fryer!
What kind of pork chops can you use in this recipe?
You can use any kind of pork chop - but I would recommend bone-in chops that are either the blade or shoulder. There's a bit more fat which adds to them staying juicy and not drying out. I would also recommend not using boneless pork chops - they're going to dry out too fast.
How do you keep pork chops from drying out in the crock pot?
My tips for not having dry pork in the crock pot are:
use shoulder/blade chops because they're fattier
have enough liquid in the slow cooker - for 2 chops - 1 can of cream soup was fine
be sure to just cook on low for 4 hours - don't let them go all day! If you cook them on high - they would probably be done in 2 hours
