Parmesan Baked Cod
Parmesan Baked Cod is my favorite fish dish! Light coated with parmesan, garlic and lemon herb - this dish is quickly baked to flaky perfection. This healthy dish is on the table in under 20 minutes!
- 1 lb cod 2 fillets
- 3/4 cup Parmesan cheese grated
- 2 tsp lemon herb seasoning
- 1 tsp garlic minced
- 1 tsp parsley
- 1/2 tsp coarse sea salt
- 1 tbsp olive oil
- 3 cups baby spinach
- 1/2 pound asparagus trimmed
- 1 cup cherry tomatoes sliced in half
Preheat the oven to 400ºF. Line a rimmed baking sheet with parchment paper.
In a breading tray, mix together the Parmesan, lemon herb seasoning, garlic, parsley and salt.
Drizzle the cod with olive oil, then dredge in the cheese mixture, pressing it in lightly with your fingers.
Transfer to the baking sheet. Top cod with any leftover cheese mixture.
Bake until the fish is opaque in the thickest part, 10-15 minutes.
I decided to add veggies to this by laying out trimmed asparagus, spinach and sliced cherry tomatoes. Sprinkle all of that with olive oil, salt & pepper. Then add fish on top of spinach.
If your veggies are thin/small like these - they'll be done in the same time!
