Parmesan Baked Cod

Parmesan Baked Cod is my favorite fish dish! Light coated with parmesan, garlic and lemon herb - this dish is quickly baked to flaky perfection. This healthy dish is on the table in under 20 minutes!

  • 1 lb cod 2 fillets
  • 3/4 cup Parmesan cheese grated
  • 2 tsp lemon herb seasoning
  • 1 tsp garlic minced
  • 1 tsp parsley
  • 1/2 tsp coarse sea salt
  • 1 tbsp olive oil


  • 3 cups baby spinach
  • 1/2 pound asparagus trimmed
  • 1 cup cherry tomatoes sliced in half


  • Preheat the oven to 400ºF. Line a rimmed baking sheet with parchment paper.
  • In a breading tray, mix together the Parmesan, lemon herb seasoning, garlic, parsley and salt. 
  • Drizzle the cod with olive oil, then dredge in the cheese mixture, pressing it in lightly with your fingers. 
  • Transfer to the baking sheet. Top cod with any leftover cheese mixture.
  • Bake until the fish is opaque in the thickest part, 10-15 minutes. 


  • I decided to add veggies to this by laying out trimmed asparagus, spinach and sliced cherry tomatoes. Sprinkle all of that with olive oil, salt & pepper. Then add fish on top of spinach.
  • If your veggies are thin/small like these - they'll be done in the same time!
