Smoked Green Beans with Bacon

Smoked Green Beans are heavenly! The best part is you can put it together in minutes and then pop it on your smoker! I added bacon, onion and my favorite BBQ rub just to make it even more delicious.

  • Preheat Traeger/smoker to smoke - after 5 minutes when smoke dissipates - change temp to 225
  • Spread green beans in a baking dish 
  • Sprinkle diced onion and bacon on top of beans and stir

  • Sprinkle BBQ Rub all over dish 
  • Add water and vinegar to dish 
  • When smoker/Traeger is up to temp at 225 - add pan of green beans 
  • Smoke at 225 for 2 hours - checking at 1 hour and stirring

  • Raise temp to 400 on Traeger
  • Add butter slices to top of beans and add more seasoning if you'd like
  • Smoke for 30 minutes at 400 degrees

Notes

Can I make these if I don’t have a smoker?
Yes – you can make them in a crock pot or the oven. If you do in the crock pot – I would definitely cook the onion and bacon first. In the oven – you could put them in raw. Either way I would add a few dashes of Liquid Smoke to add that flavor and scent.
How would I make this on a regular grill.? 
You just need wood chips. Soak them in water for 30 minutes before starting the grill. One cup of wood chips will last for about 20 minutes. Keep adding chips to the grill throughout the process. 
If you use a charcoal grill, light the coals, when the coals are ready, place them on one side of the grill. Place some of the wood chips on top of the coals. Place your food on the side without the coals to cook it with indirect heat.
Can you use fresh green beans?
Yes – they’ll just need 30-60 minutes more in the smoker. Check them to your preferred doneness.
Can you use canned green beans?
Yup! They’ll need LESS time – by 30-60 minutes! They’ll be much softer – so they would be my last choice.
Do I need to cook the bacon and onions first?
Nope! When you kick the smoker up to 400- they’ll finish cooking and be just right! You can cook them a little if you’d like but do NOT cook them all the way through.
What kind of seasoning should I use if I don’t have a BBQ rub?
Salt, pepper, garlic – always works!
