well sure – it’s going to taste very different – black beans are meatier, dense and not as sweet as red beans – so it’s a different dish – but yes – they would work!

My dad was from NOLA and I remember his red beans and rice as the best ever! Sadly my dad passed away in 1985 and really I wished I’d paid closer attention when he made them lol mind you he was all day making it… simmering until it thickened and he would put whole cloves of garlic in and they would simmer all day just absorbing every delicious spice & flavor & literally fights would break out over who got the whole cloves(being older, wiser & meaner I got more than my fair share lol) Popeyes has the closest flavor to my dad’s red beans & I miss the all day garlic cloves but this recipe is excellent, fast and brings a little bit of NOLA here to La Vernia Texas so thanks!
