These Traeger Smoked Stuffed Burgers are the best burgers I've had! A delicious burger with simple seasonings and a perfect smoke ring - filled with cheddar cheese, smoky bacon and caramelized onions!

  • Dice bacon and onion. In a large skillet over medium-high heat, cook bacon and onion until bacon is cooked through but not crispy. Set aside in a small bowl. 
    4 slices bacon, 1/2 cup onion
  • Preheat smoker to 225º 
  • In a large mixing bowl, combine ground pork, ground beef, worcestershire, salt, pepper, garlic and onion powder. Mix well to combine and form into 8 thin patties (about ¼” thick)
    1.5 lbs ground pork, 1 lb ground beef, 1 tbsp Worcestershire sauce, 1 tbsp minced garlic, 1 tsp salt, 1 tsp black pepper, 1/2 tsp onion powder
  • Once bacon and onion has cooled a bit, add cheese and stir together. 
    1 cup cheddar cheese
  • Arrange 4 patties on a cutting board. Place 2 tbsp of bacon and cheese mixture on center of burger. Top each with remaining patties. Pinch the edges to seal.
  • Place patties directly onto the grill grate and close the lid. Smoke for 1 hour until internal temperature hits 140-145 degrees F - you can check with an instant read thermometer. Be sure you're checking the temp of the burger and not the stuffing.
  • Brush inside of each bun with melted butter. Place burger buns onto grill grates for 5 minutes towards the end of cooking time.
    2 tbsp butter, 4 brioche hamburger buns
  • Arrange burger patties and top with pickles, lettuce and tomatoes.
