Longhorn Stuffed Mushrooms are a delicious side dish or appetizer! This Longhorn Copycat of these vegetarian mushrooms are LOADED with white cheddar cheese and a creamy Alfredo sauce!

Ingredients
  

  • 16 oz mushrooms stems removed
  • 1/4 cup breadcrumbs
  • 3 tbsp butter melted
  • 1/4 tsp coarse sea salt
  • 1/4 tsp black pepper
  • 1.5 cup white cheddar cheese grated

Homemade Alfredo Sauce

  • 3 tbsp butter salted
  • 1 tsp minced garlic
  • 2 tsp flour
  • 1 1/3 cup half and half
  • 2/3 cup Parmesan cheese grated

Instructions
 

  • Preheat the oven to 375º. Spray cast iron skillet lightly with nonstick spray.
  • Rub mushrooms with a damp paper towel to clean dirt from the mushrooms. Pat dry with a paper towel. Remove mushroom stems and set mushroom tops aside.

  • In a medium mixing bowl, combine breadcrumbs, melted butter, salt & pepper. Set aside.
    1/4 cup breadcrumbs, 3 tbsp butter, 1/4 tsp coarse sea salt, 1/4 tsp black pepper
  • For the alfredo sauce. In a small skillet over medium heat, melt butter.

  • Add garlic and stir – turn heat to low. Add flour and whisk.
    1 tsp minced garlic, 2 tsp flour
  • Add half and half and Parmesan cheese and simmer – whisking constantly. Alfredo is "done" when it is creamy and cheese is all melted. 
    1 1/3 cup half and half, 2/3 cup Parmesan cheese
  • Spoon half the Alfredo Sauce into the bottom of the pan. Set mushroom caps into the dish on top of the Alfredo. 
  • Spoon remaining Alfredo Sauce over mushrooms. Cover all mushrooms with white cheddar cheese. Top with butter breadcrumbs. 
    1.5 cup white cheddar cheese
  • Bake for 10 minutes. Switch oven from bake to Broil Low. Broil for 2-3 min until breadcrumbs are golden brown but watch very closely on broil so it doesn’t burn
  • Remove baking dish from the oven. Sprinkle with fresh parsley and serve.
