Core tomatoes and cut 2″-wide circle at top of each tomato
Scoop out insides of tomatoes and sprinkle insides light with salt to pull out water
Place tomatoes upside-down on a paper towel and let drain while you make the filling
Preheat oven to 350
In a large skillet, brown ground beef and onion breaking it up with a wooden spoon, and cook until browned and cooked through, 8 minutes.
Stir in taco seasoning and water. Stir until sauce forms and thickens.
Place tomatoes right side up in a baking dish and season insides with salt and pepper.
Stuff tomatoes with taco meat
Take 2-3 small diced pieces of cheese and push them down into the taco meat. (the filling will shrink as you cook, so be sure to mound tops until they look like they’re overflowing)
Top with a few tortilla strips and push into the taco meat
Bake at 350 for 20 minutes
Remove tomatoes from oven and serve with sides of sour cream, salsa and green onions
Notes
You can also air fry these at 350 for 10-15 minutes
