This is by far the BEST Weight Watchers cabbage soup you’ll ever eat! This easy soup recipe is filled with eight vegetables plus ground turkey to make it even heartier.

Ingredients
  

  • 1 lb fat free ground turkey breast
  • 2 cups cabbage chopped
  • 4 cups fat free, low sodium beef broth
  • 4 cloves garlic minced
  • 1 tbsp tomato paste
  • 1 cup mushrooms sliced
  • 1/2 cup onion diced
  • 1 cup carrot diced
  • 1 cup frozen green beans
  • 1 cup zucchini halved & sliced
  • 1 tsp basil
  • 1 tsp oregano
  • 1 cup tomato sauce
  • 2 cups stewed tomatoes
  • 2 cups frozen cauliflower rice
  • 1 tbsp Better than Bouillon Beef Base
  • 1 tbsp salt

Instructions
 

  • Heat pot on medium high and add 1/4 cup beef broth, carrots and onions. Cook for 5 min
  • Add ground turkey and garlic. Add more beef broth if pan is dry. Brown turkey and cook through.
  • Add remaining ingredients EXCEPT zucchini
  • Bring to a boil. Cover, reduce heat and simmer for 20 minutes
  • Add zucchini and simmer 5 min more
  • Ladle into bowls and serve with a sprinkle of coarse sea salt

Notes

Can cabbage soup be frozen?

Yup! There’s no pasta or dairy – so it freezes very well! This recipe makes six 2-cup servings (i.e. A LOT OF DAMN SOUP) – but because it freezes so well – I was thrilled to keep eating it. The next week, I had a bowl every day and even on day 5 was still excited about it! I always use airtight glass containers for all my leftovers. You could also pour (once cooled) this comforting soup into ziploc bags and lay them flat in the freezer. This will ensure they take up less space.

Can cabbage soup be made in the crock pot or slow cooker?

Yup! After you've browned the turkey - you can transfer everything to the slow cooker and cook on low for 4 hours. I would still reserve the zucchini and add in the last 30-60 minutes so it doesn't just disintegrate.

How do you reheat cabbage soup?

To stay super simple, the microwave truly is the best for 1-2 helpings. But if you have a larger bowl of leftovers, reheating over medium heat on the stove top is great too. You can always add more broth, water or veggies if you'd like too! (Great way to use up leftovers!)
