This is by far the BEST Weight Watchers cabbage soup you’ll ever have! It’s so much more – filled with every vegetable I could think of and I added ground turkey. Two cups of this hearty soup is only 0/1 POINT! (If you’re not on WW – it means it’s super healthy!!!) I’ve been astounded at how much I enjoyed all of these leftovers!

I joined Weight Watchers at the beginning of the year and have been wanting to make a cabbage soup because it’s so healthy and low on points. And let me tell you – I will be making this every month from here on out and so will you!
Why cabbage soup for weight loss? (& why it makes you poop!)
Cabbage does actually have detox power! It has diuretic properties that held rid your body of toxins, excess liquids, etc – and THAT’S WHY IT MAKES YOU POOP! It’s also rich in sulfur which helps your liver break down toxins. The detox and diuretic properties are what make it a weight loss favorite – and WHY I’M MAKING IT AGAIN THIS WEEKEND! 😉

What is in the BEST cabbage soup?
Sometimes cabbage soup is super bland and just cabbage and broth – but not here! I loaded this dog up! I started with ground turkey and then added every zero point vegetable I could: cabbage, green beans, carrots, onions, mushrooms, zucchini, tomatoes and cauliflower!
How do you make cabbage soup?
It’s super easy! Brown the turkey, onion and carrot – then add everything else (all of the above (minus the zucchini) plus beef broth, tomato paste, tomato sauce and seasonings) and simmer! Add the zucchini just for the last five minutes or it will get too mushy.
Can cabbage soup be frozen?
Yup! There’s no pasta or dairy – so it freezes very well! This recipe makes six 2-cup servings (i.e. A LOT OF DAMN SOUP) – but because it freezes so well – I was thrilled to keep eating it. I had a bowl every day and even on day 5 was still excited about it!

Tell me about Weight Watchers
Of course, you’ve heard of WW but what do you know? Are you a member? (Let me know in the comments!) It’s basically a portion control plan – all foods have points and based on your height & weight – you get a certain number of points. They also have three different “plans” – purple, blue and green – with varying lists of zero-point foods. I’m on green which has the fewest free foods – mainly because I need train myself to eat less.
How many points are in this Weight Watchers cabbage soup?
On the purple and blue plans – it’s ZERO POINTS! On the green – it’s ONE POINT! Woohoo!!! For me – that means I can splurge a little more on dinner!

What to serve with Cabbage Soup?
- Copycat Starbucks Banana Bread (WW version – 4 pts)
- Strawberry Zucchini Bread
- Air Fryer Grilled Pineapple

The BEST Cabbage Soup
Ingredients
- 1 lb fat free ground turkey breast
- 2 cups cabbage chopped
- 4 cups fat free, low sodium beef broth
- 4 cloves garlic minced
- 1 tbsp tomato paste
- 1 cup mushrooms sliced
- 1/2 cup onion diced
- 1 cup carrot diced
- 1 cup frozen green beans
- 1 cup zucchini halved & sliced
- 1 tsp basil
- 1 tsp oregano
- 1 cup tomato sauce
- 2 cups stewed tomatoes
- 2 cups frozen cauliflower rice
- 1 tbsp Better than Bouillon Beef Base
- 1 tbsp salt
Instructions
- Heat pot on medium high and add 1/4 cup beef broth, carrots and onions. Cook for 5 min
- Add ground turkey and garlic. Add more beef broth if pan is dry. Brown turkey and cook through.
- Add remaining ingredients EXCEPT zucchini
- Bring to a boil. Cover, reduce heat and simmer for 20 minutes
- Add zucchini and simmer 5 min more
- Ladle into bowls and serve with a sprinkle of coarse sea salt
Oh yum! I often end up with leftover cabbage and this looks like such a great way to use it up! Such a warm and comforting soup.
