Air Fryer Zucchini Parmesan

Air Fryer Zucchini Parmesan is a super quick (and guilt-free) side dish that changes zucchini from bland to delicious! These little zucchini crisps are crunchy, cheesy and zippy from a little brush of dijon mustard.

  • Wash zucchini but do not peel 
    2 small zucchini
  • Slice zucchini thinly and lay zucchini slices in a single layer on a piece of parchment paper
    If you don't have parchment paper, be sure to spray tray with non-stick cooking spray
    Oven-style air fryer - use parchment paper sheets
    Basket style air fryer - use shaped sheets that fit your basket
  • Sprinkle zucchini lightly with salt and pepper.
    1 tsp coarse sea salt, 1 tsp ground black pepper
  • Using a silicone baster, brush slices lightly with dijon mustard
    2 tbsp Dijon mustard
  • Sprinkle Parmesan cheese over top of all zucchini slices
    3 tbsp grated Parmesan cheese
  • Place parchment paper into air fryer. Air fry at 400°F for 10 minutes. 
  • Remove from the air fryer and serve.
  • OPTIONAL: Serve with a side of ranch, marinara sauce or a squeeze of fresh lemon
