Alfredo and Meatballs are a delicious combination you never knew you needed! Rich homemade creamy alfredo sauce topped with light chicken meatballs will be a new family favorite! (And it's done in about 30 minutes!)

Ingredients
  

Meatballs

  • 1 lb ground chicken
  • 1/4 cup panko breadcrumbs
  • 2 tbsp milk
  • 2 tbsp onion flakes
  • 2 tbsp garlic minced
  • 1 large egg
  • 1/4 cup fresh parsley chopped
  • 1 tbsp fresh rosemary crumbled
  • 1/2 tbsp thyme
  • 1 tbsp dijon mustard
  • 1 tsp coarse sea salt
  • 1/2 tsp black pepper

Fettuccine Alfredo

  • 1/2 lb Fettuccine
  • 6 tbsp butter
  • 1 tbsp garlic minced
  • 2 tbsp flour
  • 3 cups half and half
  • 1 cup Parmesan or Romano grated

Instructions
 

  • Preheat oven to 350º
  • In large bowl, combine panko and milk and set aside for 5 minutes.
    1/4 cup panko breadcrumbs, 2 tbsp milk
  • After 5 minutes, add onion flakes, garlic, chicken, egg, parsley, rosemary, thyme, mustard, salt & pepper. Combine meat mixture gently with hands.
    1 lb ground chicken, 2 tbsp onion flakes, 2 tbsp garlic minced, 1 large egg, 1/4 cup fresh parsley, 1 tbsp fresh rosemary, 1/2 tbsp thyme, 1 tbsp dijon mustard, 1 tsp coarse sea salt, 1/2 tsp black pepper
  • Gently shape meatball mixture into 1 1/2 inch balls. Place balls on a parchment covered baking sheet.
  • Bake for 20 minutes until meatballs are 160º in the center when checked with meat thermometer.
  • While meatballs are in the oven, Cook pasta according to package instructions to al dente.
    1/2 lb Fettuccine
  • When there is five min left on pasta and meatballs, in a large deep non-stick skillet over medium heat, add butter to pan. Once melted, add garlic to the pan.
    6 tbsp butter, 1 tbsp garlic
  • Cook for 1 minute, stirring occasionally
  • Whisk in flour
    2 tbsp flour
  • Quickly add in half and half and cheese.
    3 cups half and half, 1 cup Parmesan
  • Whisk frequently until sauce simmers and remove from heat
  • Drain pasta when done
  • Remove chicken from air fryer and let rest for five minutes. Then slice.
  • Add cooked pasta to alfredo and toss lightly. Top with meatballs.
  • Serve and sprinkle with parmesan cheese and parsley or basil
