Bacon on the Blackstone

Ingredients
  

  • 1 lb thick cut bacon

Instructions
 

  • Heat Blackstone griddle to medium heat
  • Check griddle temperature with thermometer gun - once griddle temp is 275º - lay out thick-cut bacon strips. Let cook for 2 minutes. TIP: Don't just throw it on high and go - your bacon will cook in about 2-3 min total and be super crunchy! You lose a lot of flavor that way. Go a little lower and slower! 
    1 lb thick cut bacon
  • Using a metal spatula, flip bacon slices. Let cook 2-3 minutes more until bacon reaches just UNDER desired doneness. I like my bacon chewy - so medium low heat for 2-3 min each side is just right. If you like it crispier, turn the heat up to medium and it'll be done in the same time. Recommend taking OFF before it's "done" because it gets crispier as it rests. 
  • Remove slices of bacon from Blackstone and move to a paper towel to drain excess grease. 
  • For cleaning, scrape excess bacon grease and browned bits through drain hole in back of griddle - be sure you have tin catcher in there! Turn off heat and using a lint-free towel, brush any remaining excess bacon fat across griddle surface. Let dry and cool before placing your silicone mat and cover on the flat-top griddle.
