Ingredients
  

  • 6 large eggs
  • 1/4 cup milk
  • 1/4 tsp coarse sea salt
  • 1/8 tsp ground black pepper
  • 1 tbsp oil
  • 1/2 lb bulk breakfast sausage
  • 1 bell pepper diced
  • 1 small onion diced
  • 1/3 cup salsa
  • 1/2 cup queso fresco crumbled
  • 1 avocado diced
  • 2 tbsp cilantro chopped
  • 12 street taco tortillas

Instructions
 

  • In a bowl, crack eggs and add milk, salt & pepper. Whisk until yolks are broken and everything is fully incorporated. Whisking helps add air into the eggs to keep them light.

  • Preheat Blackstone on Medium-high Heat
  • On one side of griddle add sausage, pepper and onion. Brown sausage for 3-4 minutes - chopping and mixing along the way.
    1/2 lb bulk breakfast sausage, 1 bell pepper, 1 small onion
  • Once sausage is on the griddle - on the other side of the griddle, spray lightly or drizzle with oil onto the griddle cooking surface.
    1 tbsp oil
  • If you have a InstantPot – take out the silicone ring from the lid (or buy an extra) – it's a great tool to use here!!!!
  • Turn dial down on oil to Medium-Low heat and pour egg mixture into silicone ring if you have one!! If not, keep large metal spatula on its side at the top of the grill to block the grease trap. The tilt of the griddle will pull the eggs out the grease trap – so block this area with your metal spatula or you'll lose your eggs!
  • Once eggs start to cook after a minute or so, start using spatula to pull eggs from the edge toward the center and start slowly folding the eggs over – like you would scramble eggs on the stove. Keep the heat low and go all the way around the edges – using the spatula to pull the egg in toward the center.
  • Continue pushing the egg in when cooked and slowly moving around until all of the egg is cooked but still wet. Once eggs are set you can remove the silicone ring if using.
  • Move sausage mixture to lower heat side of griddle with eggs and turn heat to low.
  • On hotter side of grill, add tortillas for 30 seconds per side just to warm.
  • Once flipped, spoon egg and sausage mixture onto each tortilla. Top with cheese, salsa, avocado & cilantro and serve!
