Blueberry Clafoutis
Blueberry Clafoutis is a light and elegant French dessert filled with juicy blueberries baked in a custardy batter. This easy blueberry clafoutis recipe is just sweet enough with a hint of lemon and comes together in minutes. Perfect for brunch, holidays or a simple summer dessert, it looks fancy but is surprisingly easy to make.
Preheat oven to 425ºF. Generously butter a cake pan. (Use butter not non-stick spray in this instance.)
1 tbsp butter
În a medium bowl, toss blueberries with sugar, juice from half lemon and lemon zest.
1 pint fresh blueberries, 1 tbsp white sugar, 1 lemon
Pour blueberries into prepared baking dish.
In a blender, add half & half, eggs, sugar, flour, vanilla and salt. Blend until batter is smooth. Pour batter over blueberries and gently tap pan on counter to remove air bubbles.
1 ¼ cups half and half, 3 large eggs, 1/2 cup white sugar, 1/2 cup all-purpose flour, 1 tablespoon vanilla, 1/8 tsp coarse sea salt
Bake in the preheated oven for 30 minutes until center is set. Check the center with a toothpick - it should come out clean. Cool 10-15 minutes until clafoutis is just warm. The cake will deflate slightly.
