Blueberry Clafoutis is a light and elegant French dessert filled with juicy blueberries baked in a custardy batter. This easy blueberry clafoutis recipe is just sweet enough with a hint of lemon and comes together in minutes. Ingredients
  

  • 1 tbsp butter
  • 1 pint fresh blueberries
  • 1 tbsp white sugar
  • 1 lemon zested & juiced
  • 1 ¼ cups half and half
  • 3 large eggs
  • 1/2 cup white sugar
  • 1/2 cup all-purpose flour
  • 1 tablespoon vanilla
  • 1/8 tsp coarse sea salt
  • 2 tbsp Powdered sugar

Instructions
 

  • Preheat oven to 425ºF. Generously butter a cake pan. (Use butter not non-stick spray in this instance.)

  • În a medium bowl, toss blueberries with sugar, juice from half lemon and lemon zest.
    1 pint fresh blueberries, 1 tbsp white sugar, 1 lemon
  • Pour blueberries into prepared baking dish.
  • In a blender, add half & half, eggs, sugar, flour, vanilla and salt. Blend until batter is smooth. Pour batter over blueberries and gently tap pan on counter to remove air bubbles.

  • Bake in the preheated oven for 30 minutes until center is set. Check the center with a toothpick - it should come out clean. Cool 10-15 minutes until clafoutis is just warm. The cake will deflate slightly.
  • Dust with powdered sugar and serve warm.
