Cheese Fries with Bacon

These Cheese Fries with Bacon are a copycat from my recent trip to Aruba! A week in Aruba and we hit up Lucy's for this cheesy goodness more than once! Loaded with melty cheese, meaty bacon, tomatoes, onion and a spicy Chipotle Ranch dressing.

Ingredients
  

  • 13 oz frozen Fries 1/2 bag
  • 4 slices Bacon
  • 2 cups cheddar Cheese grated
  • 1 roma Tomato diced
  • 2 slices White onion diced

Chipotle Ranch Dressing

Instructions
 

  • Preheat oven to 425º
  • Place fries in a single layer on rimmed baking sheet. On a separate rimmed baking sheet with a baking rack, lay out 4 slices of bacon.
    13 oz frozen Fries, 4 slices Bacon
  • Place sheet pans in oven and bake for 10 min. Rotate pans and bake for 10 more minutes until bacon and fries are golden brown.
  • Remove pans from oven and place bacon on paper towels to drain and cool slightly
  • Add shredded cheese to top of fries and place back in oven for 3-5 minutes. I recommend having more fries than you think. You need 2 layers of fries for one thick layer of cheese or it’s a little too much.
    You can turn the oven to broil on low if you like - but the cheese melts just fine at 425º.
    2 cups cheddar Cheese
  • Dice tomatoes and white onion and roughly chop bacon
    1 roma Tomato, 2 slices White onion
  • Stir together ranch dressing with chipotle sauce
    1/3 cup ranch dressing, 1 tsp chipotle pepper hot sauce
  • Once cheese is melted, remove from oven. Top with bacon, tomatoes, onion and chipotle ranch
