This Chicken Apple Sausage Sheet Pan Dinner is now on our regular rotation! Loaded with sausage, sweet potatoes, broccoli, carrots, bell pepper and onions - all tossed in a sweet & savory Maple Dijon Glaze. Man oh man - THIS dish is where it's at. (Oh and it's soooo easy to make!)

Ingredients
  

  • 2 small sweet potatoes diced
  • 2 carrots sliced
  • 12 oz chicken apple sausages
  • 2 cups broccoli bite-size
  • 2 bell peppers sliced
  • 1 red onion large slices
  • 1 tsp coarse sea salt
  • 1 tsp black pepper

Maple Dijon Garlic Glaze

Instructions
 

  • Preheat oven to 400°F.
  • CHOP carrots and potatoes first into a small pieces (1/2”). Add to prepared sheet pan (by prepared I mean put on a sheet of parchment paper) and drizzle veggies with olive oil, salt & black pepper.
    2 small sweet potatoes, 2 carrots, 1 tsp coarse sea salt, 1 tsp black pepper
  • Place in oven for 10 minutes.
  • CHOP sausages, peppers, broccoli and onion. Broccoli and onion can be slightly larger because they cook more quickly. Place in a large mixing bowl.
    12 oz chicken apple sausages, 2 cups broccoli, 2 bell peppers, 1 red onion
  • COMBINE ingredients needed for Maple Dijon sauce in a small bowl
    3 tbsp olive oil, 3 tbsp Dijon mustard, 2 tbsp maple syrup, ½ tsp garlic powder, ½ tsp smoked paprika
  • REMOVE pan from oven and add carrots and potatoes to large bowl with all vegetables and sausage. Add sauce, salt and pepper to large bowl and toss so everything is coated. Pour mixture onto the sheet pan into an even layer.
  • Bake for 25 minutes or until potatoes and carrots are fork tender.
