Chicken Salad Chick Southwest Senorita
Chicken Salad Chick Southwest Senorita is a creamy, zippy & crunchy seasonal chicken salad. This senorita brings a Southwest seasoning flair along with cheese and peppers but keeps that signature Chicken Salad Chick chicken salad texture. The taste is like the best creamy cheesy chicken taco slathered on a croissant.
Ingredients
- 2 cups cooked chicken breast shredded (about 1 lb)
- 2 tbsp celery finely minced
- 1/2 cup Duke's mayonnaise
- 1/8 tsp onion powder
- 2 tbsp poblano peppers diced
- 3 tbsp sharp cheddar grated
- 1/4 cup whole kernel corn
- 2 tbsp taco seasoning
Instructions
- Use the paddle attachment on your mixer to shred your chicken. This is the KEY to getting the texture that Chicken Salad has!2 cups cooked chicken breast
- FINELY mince your celery – to where you can barely see pieces.2 tbsp celery
- In a large mixing bowl, to your chicken mixture - add the mayonnaise, onion powder, poblano peppers, cheddar cheese, corn and taco seasoning1/2 cup Duke's mayonnaise, 1/8 tsp onion powder, 2 tbsp poblano peppers, 3 tbsp sharp cheddar, 1/4 cup whole kernel corn, 2 tbsp taco seasoning
- Serve with bread, crackers or on a salad. I like to drizzle a little extra buffalo sauce on top and sprinkle with green onions.
- Makes 2.25 cups
