Ground Pork Spaghetti

This Ground Pork Spaghetti will remind you of a rich bolognese sauce at a fancy Italian restaurant - but you'll know you made it at home and it's easy!!! Full of chunky veggies, affordable ground pork and delicious San Marzano tomatoes!

Ingredients
  

  • 2 tbsp extra virgin olive oil
  • 1 onion diced
  • 2 carrots grated
  • 1 celery stalk diced
  • 1 tbsp garlic minced
  • 1 tsp Italian seasoning
  • 1/2 tsp fennel seeds
  • 8 oz mushrooms cleaned, sliced
  • 1.5 lb ground pork
  • 1 cup red wine
  • 28 oz San Marzano crushed tomatoes
  • 14.5 oz diced tomatoes
  • 6 oz tomato paste
  • 1/4 tsp dried sage
  • 2 tsp coarse sea salt
  • 1 lb spaghetti
  • 2-3 sprigs fresh herbs basil, parsley, rosemary

Instructions
 

  • Heat oil in Dutch Oven over medium-high heat
    2 tbsp extra virgin olive oil
  • Add celery, carrot, onion, garlic, Italian seasoning and fennel. Cook about 5 minutes until veggies are softened.

  • Add mushrooms and ground pork and cook 10 minutes over medium heat, stirring occasionally, until pork is mostly cooked through. 
    8 oz mushrooms, 1.5 lb ground pork
  • Add wine to pan and reduce until liquid is mostly gone.
    1 cup red wine
  • Add crushed tomatoes, diced tomatoes, tomato paste, salt and sage and stir.
    28 oz San Marzano crushed tomatoes, 14.5 oz diced tomatoes, 6 oz tomato paste, 1/4 tsp dried sage, 2 tsp coarse sea salt
  • Cover and Simmer for about 30 min.
  • Bring a large pot of water to a boil and prepare spaghetti according to package directions for al dente. 
    1 lb spaghetti
  • Finely dice fresh herbs and add to sauce and stir. Simmer 10 more minutes 
    2-3 sprigs fresh herbs
  • Serve over spaghetti with parmesan cheese and garlic bread
