Equipment

Ingredients

  • 1 lb chicken breast
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 5 oz Spring Mix
  • 2 cups strawberries quartered
  • 1 cup red grapes
  • 1 cup mandarin oranges
  • 1/3 cup candied pecans
  • 4 oz feta cheese crumbles
  • 1/4 cup Kens Raspberry Walnut Vinaigrette

Instructions

  • Slice chicken breast (if large) in half so its’ approx 1/2” thick. Season with salt & pepper on both sides.
1 lb chicken breast, 1/8 tsp salt, 1/8 tsp pepper
  • Place chicken breast slices in air fryer. Air fry at 360º for 11-15 minutes depending on size of chicken breasts. Turn half way thru. Test temperature with an instant read meat thermometer. Remove at 155º and let rest while you assemble salad.
  • Prepare all fruit while chicken is cooking. Rinse strawberries and grapes and then dry with paper towel to remove extra moisture.
2 cups strawberries, 1 cup red grapes
  • Separate spring mix into 4 bowls or large plates. Top each with strawberry slices, red grapes, pecans and feta crumbles.
5 oz Spring Mix, 1 cup mandarin oranges, 1/3 cup candied pecans, 4 oz feta cheese crumbles
  • Slice chicken and add to top of salads.
  • Pour Salad Dressing over top and serve.
1/4 cup Kens Raspberry Walnut Vinaigrette

Notes

If you don't have an air fryer, here are the easiest ways to make chicken:
* baked chicken - sprinkle with salt & pepper - bake at 350º for 25 minutes - check to be sure it's 155-160º internal temp and let rest for 5 min
* rotisserie chicken - you can use a store-bought rotisserie chicken and slice up the cooked chicken breast
You could cook on a skillet but I feel it dries out the chicken breast too much. You could sear the chicken on the skillet for 2 minutes per side and then bake for 20-25 minutes to get the best of both worlds.
