Ingredients

  • 1/4 lb breakfast sausage
  • 1 tbsp butter
  • 5 large eggs
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 2 tbsp Rotel tomatoes with green chiles canned
  • 4 8-inch flour tortillas
  • 2 slices American cheese

Instructions

  • Preheat a skillet over medium heat. Crumble the sausage into the pan. Sauté the sausage for 3 to 4 minutes or until the sausage is browned.
  • Remove sausage from pan and set aside.
  • Wipe out skillet to remove grease. Add butter. Turn heat to medium low.
  • In a bowl, whisk together eggs, salt & pepper.
  • Pour the beaten eggs into the pan and slowly scramble them over medium heat using a spatula.
  • Heat up the tortillas by steaming them in the microwave in moist paper towels
  • In a bowl, toss together the scrambled egg, sausage and Rotel tomatoes.
  • To make the burrito, lay half slice of cheese on middle of tortilla.
  • Spoon 1/4 of the egg filling into the cheese in the tortilla. Fold the bottom 1/3 of the tortilla up over the filling, then fold up about two inches of one side over the middle, then roll tightly to the other side of the burrito. One end should be open.
