Mini Blackberry Cobbler

Mini Blackberry Cobbler

Mini Blackberry Cobbler is my new favorite dessert! They go together in 10 minutes and then you and each family member get their very own dessert! Top with ice cream or whipped cream or just enjoy on their own. These are also great if you're looking for a special occasion dessert!

Ingredients

  • 16 oz blackberries fresh
  • 2 tbsp sugar
  • 1/2 lemon juice only
  • 2 tsp cornstarch
  • 3/4 cup flour
  • 3/4 cup light brown sugar
  • 2/3 cup oats
  • 1/8 tsp coarse sea salt
  • 10 tbsp butter cold, diced, split (8/2 tbsp)

Instructions

  • Preheat oven to 375º.
  • Toss blackberries, sugar, lemon juice and cornstarch in a bowl, then divide among four 8-oz. ramekins.
16 oz blackberries, 2 tbsp sugar, 1/2 lemon, 2 tsp cornstarch
  • Whisk together flour, brown sugar, oats and salt. Incorporate 8 tbsp butter using a pastry blender or fingers until mixture appears sandy with a few pea-size clumps.
3/4 cup flour, 3/4 cup light brown sugar, 2/3 cup oats, 1/8 tsp coarse sea salt, 10 tbsp butter
  • Distribute evenly over blackberries. If topping seems a little dry (not seeing butter clumps), melt remaining 2 tbsp butter and spoon over top
  • Bake until golden, 25 to 30 minutes.
  • Remove from oven, top each ramekin with a small scoop of vanilla ice cream and serve immediately.
