Ingredients

  • 4 tbsp salted butter softened
  • 1 tbsp fresh Italian parsley chopped
  • Zest from 1 lemon
  • 4 cloves garlic minced
  • 4 4 oz salmon fillets
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tbsp Italian seasoning

Instructions

  • In a small bowl, stir together softened butter, parsley, lemon zest and minced garlic. Spoon the butter mixture onto a piece of parchment paper or plastic wrap then roll it into a log and twist the ends to close. Chill overnight, or until firm. You can put in the freezer for 10-15 minutes if you're short on time.
4 tbsp salted butter, 1 tbsp fresh Italian parsley, Zest from 1 lemon, 4 cloves garlic
  • Sprinkle salmon with olive oil then coat each with salt, pepper and Italian seasoning.
4 4 oz salmon fillets, 2 tbsp olive oil, 1 tsp kosher salt, 1/2 tsp black pepper, 1 tbsp Italian seasoning
  • Pour 1 tbsp olive oil in a skillet over medium-high heat. Once it's hot and the oil is shimmering, place the salmon, flesh side down on the pan and sear for 3-4 minutes, until golden and crispy.
  • Using a fish spatula (thin metal & curved) flip the salmon over and turn the heat down to medium then continue cooking for 3-4 minutes.
  • Slice the butter log into thick pieces and place one or two on top of each piece of salmon (you may have extra). Continue to cook for 1-2 more minutes or until the salmon flakes (internal temperature should be 135°F for medium).
  • Plate salmon and add any remaining butter. Sprinkle with fresh parsley and a squeeze of lemon.
