Papa John's Chicken Alfredo Bowl
The Papa John's Chicken Alfredo Bowl is my favorite menu item at Papa John's. But - I can make it at home and have enough to feed four people for the same price! Juicy chicken, lots of cheese and veggies - it's a delicious low-carb meal!
Season chicken breasts with salt, pepper and Italian seasoning. Place in air fryer and cook at 360º for 12-15 minutes until internal temperature reads 150º. (Chicken will finish in oven). Remove chicken and let rest 5 minutes.
2 chicken breasts, 1/2 tsp salt, 1/2 tsp black pepper, 1/2 tsp Italian seasoning
Once chicken is cooking, on a baking sheet, spread out sliced mushrooms and onion
2 cups mushrooms, 1/2 onion
Drizzle with olive oil, salt & pepper. Place in oven and roast for 10 minutes
2 tbsp olive oil
While chicken & veggies are cooking - you can make homemade alfredo sauce! Or use a jarred sauce.
AS: Melt the butter in a saucepan on medium heat. Cook for 1 minute, stirring occasionally. Add garlic and stir.
4 tbsp butter, 2 tsp garlic
AS: Whisk in flour
4 tsp flour
AS: quickly ADD half & half and Parmesan to saucepan and stir frequently until the sauce begins to simmer. Remove from heat.
2 cups half and half, 2/3 cup Parmesan cheese
Remove baking sheet from oven. Adjust oven temp to low broil.
Slice cooked chicken breast into bite-size slices
To the baking sheet, add diced tomatoes, spinach, sliced chicken and alfredo sauce. Stir to combine.
3 cups spinach, 2 tomatoes
Top with Italian seasoning and shredded cheeses.
1 cup mozzarella cheese, 1 cup provolone cheese, 1/4 cup Parmesan cheese, 1 tbsp Italian seasoning
Place baking sheet in oven and broil on low for 5 minutes and then turn broiler up to high for 2 min until cheese melts and starts to brown.
Remove and serve!

Here are three ways to cook them with my tips & tricks included!
Phantom Grill Pan – This grill pan from Phantom is great!! It’s die-cast aluminum and non-stick. It’s also so pretty! This one is from the Granite collection – I got grey because it’s simple but they have great colors!!! (I see a pink pan in my future!)
Start by searing the chicken on 7/8 and then bring the heat down to 3/4 and turn to cook all sides until internal temperature reaches 160º (about 15 minutes). Let chicken rest for 5 minutes and then slice to serve.
Air Fryer – this is my #1 way to cook chicken. Marinate overnight in Italian dressing or coat both sides with seasoning salt. Pop in the air fryer at 360º – 12 minutes for small chicken breasts – up to 18 min for larger. Juicy every time!!!!
