Copycat Taco Bell Meximelt

The Meximelt at Taco Bell was one of my absolute favorite menu items - but it's no longer on the menu! Ugh - the tragedy! This Copycat Meximelt brings it back to your kitchen by combining a taco and a quesadilla into a melty taco of goodness.

  • 1 lb ground beef
  • 6-8 6" tortillas
  • 1 pkg Taco Bell taco seasoning
  • 3/4 cup water
  • 1 cup Taco Bell Mexican blend shredded cheese
  • 1/2 cup pico de gallo


  • In skillet, on medium high heat, brown ground beef
  • Add taco seasoning and water, stir until mixture is thickened
  • On cutting board that will fit in microwave or microwave-safe plate, lay out a paper towel and sprinkle it with water so it's damp
  • Lay out 2 tortillas on paper towel
  • Spoon 1/3 cup taco meat down the middle of the tortilla
  • Line the taco meat with 2 tbsp pico de gallo
  • Line the pico with 3 tbsp shredded cheese
  • Fold over the tortilla
  • Top with another damp paper towel
  • Microwave for 60 seconds until cheese melts
