Copycat Taco Bell Meximelt
The Meximelt at Taco Bell was one of my absolute favorite menu items - but it's no longer on the menu! Ugh - the tragedy! This Copycat Meximelt brings it back to your kitchen by combining a taco and a quesadilla into a melty taco of goodness.
1 lb ground beef 6-8 6" tortillas 1 pkg Taco Bell taco seasoning 3/4 cup water 1 cup Taco Bell Mexican blend shredded cheese 1/2 cup pico de gallo
In skillet, on medium high heat, brown ground beef Add taco seasoning and water, stir until mixture is thickened On cutting board that will fit in microwave or microwave-safe plate, lay out a paper towel and sprinkle it with water so it's damp Lay out 2 tortillas on paper towel Spoon 1/3 cup taco meat down the middle of the tortilla Line the taco meat with 2 tbsp pico de gallo Line the pico with 3 tbsp shredded cheese Fold over the tortilla Top with another damp paper towel Microwave for 60 seconds until cheese melts
