The Meximelt at Taco Bell was one of my absolute favorite menu items – but it’s no longer on the menu! Ugh – the tragedy! This Copycat Taco Bell Meximelt brings it back to your kitchen by combining a taco and a quesadilla into a melty taco of goodness.
I could pretty much eat tacos every day of the week – hard shell, soft shell, cheese, no cheese, guac, sour cream – I don’t care – I’ll eat them all. Taco Bell Meximelts are simple and delicious – I would always get a couple – they’re small and super melty – so you could easily smash a couple of them.
What is in a Taco Bell Meximelt?
The Meximelt ingredients are super simple: soft shell tortilla, taco meat, pico de gallo and a Mexican cheese blend.
How do you make a Copycat Taco Bell Meximelt?
- Brown ground beef and add Taco Bell taco seasoning and water and stir until thickened
- On a plate or cutting board, lay out a paper towel and sprinkle it with water
- Lay tortillas on paper towel and top with taco meat, pico de gallo and cheese
- Fold tortillas over and top with another damp paper towel
- Microwave for 60 seconds until cheese melts
What’s the difference between a soft taco and a Meximelt?
There really isn’t much of a difference – mainly – you’re hitting the taco with the microwave after it’s made to get it all melty together! And let me tell you – it makes it sooooo good!
How do you store and reheat leftovers?
Store leftovers in an airtight container (I like these glass ones) in the refrigerator for up to a week. You can freeze up to three months. Reheat in the microwave for 1-2 minutes.

Ingredients
- 1 lb ground beef
- 6-8 6" tortillas
- 1 pkg Taco Bell taco seasoning
- 3/4 cup water
- 1 cup Taco Bell Mexican blend shredded cheese
- 1/2 cup pico de gallo
Instructions
- In skillet, on medium high heat, brown ground beef
- Add taco seasoning and water, stir until mixture is thickened
- On cutting board that will fit in microwave or microwave-safe plate, lay out a paper towel and sprinkle it with water so it's damp
- Lay out 2 tortillas on paper towel
- Spoon 1/3 cup taco meat down the middle of the tortilla
- Line the taco meat with 2 tbsp pico de gallo
- Line the pico with 3 tbsp shredded cheese
- Fold over the tortilla
- Top with another damp paper towel
- Microwave for 60 seconds until cheese melts
