The BEST Cabbage Soup
This is by far the BEST cabbage soup you'll ever have! It's so much more - filled with every vegetable I could think of and I added ground turkey. Two cups of this hearty soup is only 0/1 POINT! (If you're not on WW - it means it's super healthy!!!) I've been astounded at how much I enjoyed all of these leftovers!
- 1 lb fat free ground turkey breast
- 2 cups cabbage chopped
- 4 cups fat free, low sodium beef broth
- 4 cloves garlic minced
- 1 tbsp tomato paste
- 1 cup mushrooms sliced
- 1/2 cup onion diced
- 1 cup carrot diced
- 1 cup frozen green beans
- 1 cup zucchini halved & sliced
- 1 tsp basil
- 1 tsp oregano
- 1 cup tomato sauce
- 2 cups stewed tomatoes
- 2 cups frozen cauliflower rice
- 1 tbsp Better than Bouillon Beef Base
- 1 tbsp salt
Heat pot on medium high and add 1/4 cup beef broth, carrots and onions. Cook for 5 min
Add ground turkey and garlic. Add more beef broth if pan is dry. Brown turkey and cook through.
Add remaining ingredients EXCEPT zucchini
Bring to a boil. Cover, reduce heat and simmer for 20 minutes
Add zucchini and simmer 5 min more
Ladle into bowls and serve with a sprinkle of coarse sea salt
You can swap out ground chicken or beef for the turkey - points may change.
Feel free to leave out or add any veggies as you like - although adding corn or peas will add points.
