Ingredients
  

Honey Dijon Vinaigrette

Salad

  • 3 cups baby spinach
  • 3 cups arugula
  • 2 shallots thinly sliced
  • 8 oz cherry tomatoes halved
  • 4 oz herbed goat cheese crumbled
  • 1/4 cup pecans roughly chopped

Instructions
 

  • To make the dressing whisk together the lemon, dijon, garlic, honey, olive oil, salt & pepper. You can also add ingredients to a mason jar, top with the lid and shake.
    1 medium lemon, 1 tbsp dijon mustard, 2 garlic clove minced, 1 tbsp honey, 1/3 cup olive oil, 1/2 tsp salt, 1/4 tsp black pepper
  • In a large bowl, add the spinach and the arugula. Layer on shallots, tomatoes and dressing. Toss until combined and top with the pecans and goat cheese.
    3 cups baby spinach, 3 cups arugula, 2 shallots, 8 oz cherry tomatoes, 4 oz herbed goat cheese, 1/4 cup pecans
