Ingredients

  • 1 cup egg whites
  • 1/8 tsp garlic powder
  • 1/8 tsp salt
  • Pinch black pepper
  • 2 cups spinach leaves chopped
  • 1/4 cup feta cheese crumbled
  • 1/4 cup sun dried tomatoes chopped & split
  • 2 oz cream cheese softened (4 tbsp)
  • 2 whole wheat lavash bread

Instructions

  • Spray small baking dish with nonstick spray and preheat oven to 350º
  • Pour egg whites into baking dish. Sprinkle with garlic powder, salt & pepper
1 cup egg whites, 1/8 tsp garlic powder, 1/8 tsp salt, Pinch black pepper
  • Bake for 20 minutes - stirring halfway thru.
  • While eggs are baking, mix cream cheese with 1 tbsp sun dried tomatoes in a mini food processor and set aside. (Or you can mince the tomatoes and mix by hand. Be sure to add a little oil.)
1/4 cup sun dried tomatoes, 2 oz cream cheese
  • Heat a skillet over medium heat and spray heavily with nonstick spray. Add spinach and cook down until soft - about 3-4 minutes.
    2 cups spinach leaves
  • In a small bowl, toss together cooked spinach, feta cheese and remaining 3 tbsp sun dried tomatoes (chopped).
1/4 cup feta cheese, 1/4 cup sun dried tomatoes
  • Remove eggs from oven and slice in half.
  • On one slice Lavash bread, spread cream cheese mixture in middle section. (I trimmed lavash bread by about 3” on length)
    2 whole wheat lavash bread
  • Top cream cheese with spinach mixture.
  • Lay the egg white on top of the spinach
  • Fold bottom of burrito up half way over egg white then fold over and roll right side and then left side and push to flatten.
  • In skillet, over medium heat, spray with non stick spray. Add burritos and heat on one side for about 1 minute and flip until sealed and warm.
