Traeger Roasted Potatoes are a delicious smoky side dish great for any weeknight meal!  A little olive oil, fresh herbs and baby potatoes give you the crispy outside, fluffy inside and taste delicious!

  • Preheat Traeger to 400º
  • Slice baby potatoes in half
    1.5 lb baby red potatoes
  • Place potatoes in cast iron skillet and drizzle with olive oil. Sprinkle with salt, pepper and fresh herbs and toss gently in pan.
    2 tbsp olive oil, 1 tbsp coarse sea salt, 2 tsp black pepper, 1 tbsp fresh rosemary, 1 tbsp fresh thyme, 1 tbsp fresh oregano
  • Place cast iron skillet on grill and shut the lid 
  • Come back in about 35 minutes and potatoes should be fork tender. If they are, remove skillet and serve with a side of sour cream!
