Garlic Parmesan Pork Chops

These Garlic Parmesan Pork Chops pack in a ton of flavor and are a 15 minute one-pan meal! Sautéed in garlic butter and topped with tomatoes, Swiss Chard and a touch of Parmesan cheese. You will love every bite!

Ingredients
  

  • 2 bone-in pork chops
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp butter
  • 2 cloves garlic minced
  • 1 shallot minced
  • 6-8 leaves Swiss Chard torn into bite-sized pieces
  • 15 grape tomatoes sliced
  • 1 tbsp pine nuts
  • 2 tbsp Parmesan cheese grated
  • 2 tsp fresh parsley

Instructions
 

  • In a non-stick skillet over medium-high heat – add olive oil
    2 tbsp olive oil
  • Rinse pork chops and pat dry with paper towels. Season both sides of pork chops with salt & pepper
    2 bone-in pork chops, 1 tsp salt, 1/2 tsp black pepper
  • Place pork chops into hot skillet and sear on both sides for 2-3 min per side. Lower heat to medium. Using an instant read meat thermometer, check the internal temperature of the pork chops. When pork chops are between 125-135º move to next step.
  • Add butter and let it start to melt. Add minced shallot & garlic and cook for 1-2 min. 
    2 tbsp butter, 2 cloves garlic, 1 shallot
  • Tear chard into bite-sized pieces and add to pan along with sliced tomatoes and pine nuts
    6-8 leaves Swiss Chard, 15 grape tomatoes, 1 tbsp pine nuts
  • Cook for 2 min until tomatoes are soft and chard is wilted. Internal temp of pork chops should now be 145º.
  • Serve pork chop with all veggies on top and sprinkle with parmesan cheese and fresh parsley
    2 tbsp Parmesan cheese, 2 tsp fresh parsley
