Panera Baja Warm Grain Bowl

This copycat of the Panera Baja Warm Grain Bowl is packed with juicy, marinated chicken, brown rice, quinoa, avocado, tomatoes, feta and more! It's great for any meal at home or make-ahead meal planning!

  • Marinate chicken breasts in your favorite citrus/garlic marinade overnight.
    2 chicken breasts, 1-2 cups mojo criollo marinade
  • Air Fry chicken breasts for 10-15 minutes at 350 until cooked to 155º. Remove and let rest. That's they key - cook a little under temp and they'll come up to temp and be delicious & juicy!
  • While chicken is resting, microwave rice/quinoa mixture according to package directions.
    2 cups cooked brown rice & quinoa
  • Prep veggies: slice tomatoes and dice avocado
    10 grape tomatoes, 1 avocado
  • When quinoa is cooked, divide between two serving bowls
  • Top quinoa/argula with tomatoes, salsa, pickled red onions and avocado
    1/3 cup Black bean & corn salsa, 1/4 cup pickled red onions
  • Slice chicken and place on top of quinoa.
  • Add a heaping spoonful of yogurt to the bowl
    1/2 cup Plain Fat Free Greek yogurt
  • Top with crumbled feta and salsa verde
    1/4 cup salsa verde, 1/3 cup feta

Notes

– You can use rotisserie chicken if you like
– For the brown rice/quinoa – you can either use a bag of frozen rice/quinoa or Minute Rice makes a microwavable one! Super quick!
