Air Fryer Peach Cobbler for Two

Peach cobbler is one of my favorite desserts - it's so easy to make and it's delicious! Now, I'm making this dessert favorite in the air fryer! These little mini-peach cobblers are perfect as a dessert for two.

Ingredients
  

  • 1 cup peaches sliced, frozen-fresh-or-canned
  • 3 tbsp granulated sugar
  • 2 tbsp butter softened
  • 1/2 tsp vanilla
  • 1/8 tsp salt
  • 1/4 cup flour
  • 1/4 tsp baking powder
  • 2 tbsp milk
  • 2 tbsp granulated sugar
  • 1/2 tsp cornstarch
  • pinch salt
  • 1/8 cup hot water

Instructions
 

  • Spray individual baking dishes or ramekins with nonstick cooking spray 
  • Arrange sliced peaches in bottom of baking dish 
    * If using canned peaches be sure and drain the peach juices/syrup off really well. If using frozen, just toss them in frozen
    1 cup peaches
  • In a medium bowl, cream 3 tbsp sugar with butter and vanilla using a hand mixer – sugar will be fully incorporated into butter and it will be creamy like softened butter
    3 tbsp granulated sugar, 2 tbsp butter, 1/2 tsp vanilla
  • Add dry ingredients (salt, flour, baking powder) and milk to make a batter if your batter isn’t spreadable – add a little more milk
    1/8 tsp salt, 1/4 cup flour, 1/4 tsp baking powder, 2 tbsp milk
  • Spread the batter over fruit
  • In a separate bowl, stir 2 tbsp sugar, cornstarch and a pinch of salt Feel free to add a teaspoon cinnamon here if you like!
    1/2 tsp cornstarch, pinch salt, 2 tbsp granulated sugar
  • Sprinkle sugar mixture evenly over batter
  • Microwave 1/8 cup water for 1 minute so it's boiling
    1/8 cup hot water
  • Pour boiling water over ALL of sugar – this is where the MAGIC happens!Be sure to drizzle the water over all of the sugar so every grain is covered with water!
  • Cover ramekin with foil place in air fryer basket. Air fry at 375 for 10 min. Remove foil and air fry 5 min more.

Can you make peach cobbler in an air fryer?
Of course! This would be a quick post if not!
What if I want to make this for four people?
Double the recipe and you’re good. If your air fryer is large enough, you can cook all four ramekins at once.
Can you make this peach cobbler in larger pan?
Yes – you can use whatever size pan will fit in your air fryer. If cooking in one larger dish vs. individual ramekins, you’ll need to add time. Start with adding 5 minutes and go from there. Keep the foil on for all but the last 5-7 minutes.
Are there any eggs in this peach cobbler?
Nope! I used to make it all the time for my egg-allergic (ex)husband!
How long do you cook peach cobbler in an air fryer?
These mini-peach cobblers took 15 minutes at 375º.
How do you know when peach cobbler is done?
You can use a cake tester and be sure it comes out clean to make sure the cake is done. I also recommend leaving the dishes in the air fryer for a couple of minutes after cooking time is done.
Can you reheat cobbler in the air fryer?
Yes – you can reheat in either the microwave (30 seconds) or the air fryer (3-4 min). I would cover with foil if reheating in the air fryer to prevent further browning.
How do you store leftover peach cobbler?
Cover mini-cobblers with press n’ seal and refrigerate up to 5 days. You can also place the ramekin in a larger airtight container and refrigerate.
